The inspiration for Raj came from a past-life meditation to India. Deep in olfactory bliss, this meditation was a tour of India's rich culinary landscape. Jamie was guided, not only in terms of aromatic selection, but also instructed to pay close attention to how each ingredient is grown, treated, and managed within recipe-invention. Jamie listened as nature 'talked and listened' to other flavours, scents and ingredients. Indian cuisine has no competitor: its food and aromatic traditions are both stand-alone detail and connect threads with available resources, elder traditions, nature, and the spiritual world.
